This very special air-dried ham is made from the legs of pigs released into the New Forest in the autumn to forage for acorns. This is known as ‘Pannage’ and is an ancient right that goes back to Norman times. The acorns flavour the meat giving it a distinctive ‘nutty, buttery’ flavour. New Forest Pannage Ham has been granted PGI status meaning that it can only be made from pigs released into the New Forest for Pannage.
